It is the start of September and it is time for our regular Bottle of the Month. To see us towards the end of summer we are detailing our Cabernet Montello E Colli Asolani D.O.C. ‘Ca Dei Noni’ Riserva.
The development of this ambrosial drink is a result of Gianfranco’s travels in search of the latest wine making techniques. The vineyards for the Cabernet Sauvignon and Cabernet Franc varietals are in the Montello area, Province of Treviso, the birth place of Italia Follador. Both grape varieties have their own vineyards, each carrying the D.O.C. appellation and during production the bunches are thinned out to ensure that a yield of only 5000 kg per hectare is produced, ensuring only the highest quality grapes.
The concentrated ruby red colour of this wine is punctured with purple reflections and is indicative of it’s tobacco based bouquet. Hints of leather, liquorice, black pepper and vanilla add to its heady masculine scent. Taste-wise this has a perfectly balanced savory combination, with a velvety tannin and a fresh finishing taste.
Cabernet Montello E Colli Asolani D.O.C. ‘Ca Dei Noni’ Riserva tastes excellent with red meat, particularly the rich palatableness of venison, and seasoned cheeses. Perfect for those rich evening suppers as autumn begins to close in.
